In the world a cookie decorating finding the perfect icing can sometimes feel like a quest for the holy grail.  Fondant looks great, it looks perfect, has sharp edges, you can cut it out in the exact shape of your cookie.  But who really wants to eat a perfect looking cookie covered in fondant?  To me, fondant is one of those weird foods that are confusing about whether you should eat it or not.  I think one of the biggest gripes I hear about fondant are the flavor and texture.

Royal Icing

Royal icing is usually the first choice among cookiers.  It’s a relatively easy to make, you can make a large amount and you can create any color you need.  It’s easy to create detailed cookies with royal icing once you get the hang of it.  Have you ever flooded cookies and came back to see that the icing is dripping off the edges?  Yeah, me too.  The drawback to royal icing mainly lies within the consistency department.  But insisted she plays a big role in whether you have icing dripping off of your cookies, craters or a textured finish.  Sometimes bakers struggle with finding a meringue powder that works for them, or that has a flavor and they like.  Meringue powder can be an expensive experiment (this one is my favorite).

Buttercream

Then you have buttercream frosting.  There are many cookiers that choose to use buttercream to frost their cookies.  Usually this is done by piping a line back and forth across the cookie or in different areas to create a detailed cookie.  You definitely don’t achieve a realistic looking image what you can with royal icing.  However, that taste of the buttercream is worth it to some. Buttercream flowers on cookies can be stunning but isn’t always appropriate for all cookie sets.

First, let’s talk about the taste of rolled buttercream as I think this is the most important factor.  Imagine biting into a cookie and being greeted with the rich, creamy goodness of buttercream.  That’s the magic of rolled Buttercream.  The taste of the rolled buttercream reminds me of those pillow mints that melt in your mouth. You know the ones, that are pastel and they would always serve them alongside a dish of nuts at birthday parties/weddings/showers.




The buttercream can be flavored with any emulsions or extracts that you choose which make it very versatile! It requires basic ingredients including powdered sugar, corn syrup and room-temperature butter.


No fancy equipment is needed! You can get by with a mixing bowl and a hand mixer or a stand mixer, a rolling pin and some parchment paper. For textures, you can use anything that has texture that is safe to come into contact with food.
